Banana Oatmeal Muffins
Hi friends! Today we are making Banana Oatmeal Muffins! I usually make banana recipes when I have too many bananas and they are all going bad lol. This is exactly that recipe plus an attempt for me to start my healthy eating lifestyle.

1 3/4 CUPS oat flour (same amount of oats grinded if you don’t have oat flour)
2 TABLESPOON baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
Wet Ingredients
3 ripe bananas
1/2 CUPS coconut oil
1/4 CUPS honey
1 teaspoon vanilla extract
2 eggs at room temperature
Mix-Ins
1 cup of chocolate chips or nuts or half and half + 1 tablespoon of extra flour to mix into the mix-ins
Directions
- Blend oatmeal in a food processor to make oat flour, if you have oat flour you can also use this, use the amounts that the recipe calls for.
- Place all dry ingredients in a mixing bowl and whisk all ingredients together to make sure they are all well blended, set this aside
- Melt coconut oil in the microwave, add in honey, bananas, eggs, and vanilla, and mix and mash until all ingredients incorporate
- Add wet ingredients into dry ingredients and incorporate with a spatula until all ingredients are well blended.
- Pre-heat your oven to 400 F and prepare a cupcake baking pan with 18-20 liners
- Use a 1/4 ice cream scoop to fill the cupcake liners
- Bake for approximately 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes and then remove and allow to cool on a baking rack.
- You may store these in an airtight container or zip bag or you can also freeze them for up to 1 month.
