Chocolate Cake Recipe | The Best Chocolate Cake
Hello friends! For many years I struggled with finding the perfect chocolate cake. A recipe that would give me a sturdy cake but also a moist and fluffy cake. Now I’ve done a few experiments and I love oil based cake recipes but they are not as sturdy in my opinion when traveling or carving, and butter based cake recipes are super sturdy but can sometimes dry out quicker. After years of experimenting I decided to try substituting half butter for half oil on my current recipe. And it worked! The reason I know it worked is because my husband said it did lol. He rarely likes sweets but he LOVED this cake!
Here’s the recipe
CHOCOLATE CAKE RECIPE
- 1 stick unsalted butter (room temperature)
- 2/3 C vegetable oil
- 2 C granulated sugar
- 4 large eggs (room temperature)
- 1 TBSP vanilla
- 2 C all purpose flour
- 3/4 C dark cocoa powder
- 2 1/4 tsp baking powder
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 C buttermilk
- Combine butter + oil + sugar in your mixer and add in eggs one by one slowly until they incorporate and add vanilla
- In a bowl mix flour + dark cocoa powder + baking powder + salt. When it’s all mixed add this to your egg + sugar mix. Also add in the buttermilk. Beat the batter until everything incorporates your mixture will look chunky and runny, this is normal
- Prepare your pans (i used 2 8inch pans), spray with PAM baking spray, dust with all purpose flour to prevent sticking. Split batter evenly between two pans
- Bake at 350 degrees Fahrenheit for approximately 28-30 minutes
