Chocolate Cut Out Cookie Recipe
Hello friends! At the beginning of my cookie baking journey I had a very hard time finding the right recipe that would work for me. So after many many horrible batches and cookies that spread to the point the shape was unrecognizable, I created the perfect recipe for me.
Now please keep in mind the consistency of this recipe is more like a shortbread rather than a traditional cookie. And also remember that this recipe is not for everyone. So here it is.
Recipe

1 C (2 sticks) unsalted butter
1 large egg
1 tsp vanilla
-Place all of these ingredients into your mixing bowl and mix for approximately 5 minutes until the mixture becomes fluffy and grainy

1/2 tsp salt
1/4 tsp baking powder
-whisk all these ingredients in a bowl and then add them to the butter mixture. Make sure to mix the dough for approximately 5-7 minutes until all the ingredients come together and the batter doesn’t stick to your mixing bowl.

1 C (2 sticks) unsalted butter
1 large egg
1 tsp vanilla
3 1/2 C all purpose flour
1/4 C Hershey’s Dark Cocoa Powder
1/2 tsp salt
1/4 tsp baking powder
Directions
- Place all of these ingredients into your mixing bowl and mix for approximately 5 minutes until the mixture becomes fluffy and grainy
- whisk all these ingredients in a bowl and then add them to the butter mixture. Make sure to mix the dough for approximately 5-7 minutes until all the ingredients come together and the batter doesn’t stick to your mixing bowl.
- You can use your dough immediately, or you can also store it for later use.
- Preheat your oven to 325 degrees Fahrenheit
- To roll out the cookies place a piece of parchment paper on a flat surface, sprinkle it with powdered sugar. Use wooden guides to help you roll out your cookies evenly. Place a second piece of parchment paper on top of your cookie dough, and begin to roll until your dough reaches the desired thickness.
- To remove the cookies, dip an offset spatula into some powdered sugar and gently wiggle the spatula under the cookie. Transfer the cookies onto a prepared baking sheet.
- Bake your cookies for 12 minutes to get soft cookies or 15 minutes for crispy edges and soft insides.
